This Asian recipe is a quick stir-fry chicken with pineapple. It is as delicious as its name. Pineapple chicken can be served with rice or fried rice or enjoyed alone with fruit juice or lime.
Ingredients for 4 people: 3 tablespoons soy sauce3 tablespoons olive oil, divided½ teaspoon paprika1 pinch salt to taste1 pound boneless, skinless chicken breast, sliced or diced into strips1 red bell pepper, cubed1 bunch scallions, trimmed and sliced into 1/2-inch lengths1 (12 ounces) of canned pineapple chunks, drained and juice reserved1 tablespoon cornstarch
Procedure:Step 1Add soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and leave to marinate while preparing the remaining ingredients.Step 2Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Take the chicken away from marinade and add to the wok; discard marinade. Cook and stir occasionally for about 15 minutes until chicken is cooked through and no longer pink in the center.Step 3Add pineapple juice and cornstarch in a bowl; mix together. Put pineapple chunks in a skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and let boil. Simmer for about 3 minutes until the sauce has thickened.Step 4Pour sauce over chicken and let simmer for about 3 minutes and your delicacy is ready to be served. Pretty easy!
